In this step-by-step cooking segment, Chef Cat shows how to build rich flavor from the ground up—starting with sautéed onions, garlic, and bacon, then adding potatoes, sweet corn, cream, milk, and stock before finishing with perfectly tender fish and fresh garnish. Fish and Corn Chowder

Serves: 4–6 Prep Time: 15 minutes Cook Time: 30 minutes
Ingredients
Base
    2 tbsp butter
    1 tbsp olive oil
    1 small onion, diced
    4 cloves garlic, minced
Vegetables
    2 cups corn kernels (fresh or frozen)
    1 medium potato, peeled and diced
    ½ tsp dried thyme
    ½ tsp paprika
    Salt and black pepper, to taste
Liquids
    3 cups seafood stock or chicken stock
    1 cup heavy cream
    ½ cup whole milk
Fish
    1½ lbs white fish, cut into bite-size pieces (cod, haddock, snapper, grouper, or mahi-mahi)
Optional Garnish
    Chopped parsley
    Green onions
    Crumbled bacon
    Oyster crackers

Instructions
    In a large pot over medium heat, melt butter with olive oil. Add onion and cook until soft, about 4–5 minutes. Stir in garlic and cook 30 seconds.
    Add diced potatoes, corn, thyme, paprika, salt, and pepper. Stir to coat.
    Pour in stock. Bring to a gentle boil, then reduce heat and simmer 12–15 minutes until potatoes are tender.
    Stir in heavy cream and milk. Add fish and gently simmer 5–7 minutes until fish is opaque and flakes easily. Do not boil.
    Taste and adjust seasoning. Serve hot with desired garnishes.

Chef Tips
    For thicker chowder, mash a few potatoes in the pot
    Add a pinch of cayenne for heat
    Finish with fresh lemon for brightness

Ingredients
Fish
    1½ lbs white fish fillets (mahi-mahi, cod, grouper, snapper, or haddock)
    2 tbsp olive oil or melted butter
    Blackened seasoning to taste
Sliders
    1 package Hawaiian rolls (12 count)
    Sliced cheese (American, provolone, pepper jack, or Swiss)
    Shredded lettuce
    Thin-sliced tomato
    Thin-sliced red onion
Sauce
    Tartar sauce
Instructions
    Pat fish dry. Brush with olive oil or melted butter and coat evenly with blackening seasoning.
    Heat a skillet over medium-high heat. Cook fish 2–3 minutes per side until blackened and flaky. Add sliced cheese during the last minute to melt.
    Optional: Lightly toast Hawaiian rolls cut-side down until golden.
