Lobster Omelette with Dill, Gouda & Caramelized Onions

Serves: 1 
Prep Time: 10 minutes 
Cook Time: 15 minutes
Ingredients
Omelette

    3 large eggs
    2 tbsp milk or cream
    Salt and black pepper, to taste

Filling

    ½ cup cooked lobster meat, chopped
    ½ cup shredded Gouda cheese
    1 tbsp fresh dill, chopped
    ¼ cup caramelized onions

For Cooking

    1 tbsp butter

Optional Garnish

    Extra dill
    Chives
    Crème fraîche

Instructions

    In a small bowl, whisk eggs with milk or cream, salt, and pepper until fully combined.
    Heat butter in a nonstick skillet over medium-low heat. Pour in eggs and gently swirl the pan. Cook until eggs are mostly set but still slightly soft on top.
    Sprinkle lobster, Gouda, dill, and caramelized onions evenly over one half of the omelette.
    Gently fold the omelette in half. Cook 1–2 more minutes until cheese is melted and eggs are just set.
    Slide onto a plate and garnish if desired. Serve immediately.

Chef Tips

    Low heat keeps the omelette tender.
    Gruyère or Havarti work well if Gouda isn’t available.
    Finish with a squeeze of lemon for brightness.

Think sushi is only for the pros? Chef Cat Pfeiffer is here to prove otherwise.

In this cooking segment, Chef Cat walks Earl Byrd, III through making a fresh, flavorful spicy tuna sushi roll at home. From preparing the rice to assembling the roll, this recipe takes the mystery out of homemade sushi and turns it into something anyone can try.

Recipe: Spicy Tuna Sushi Bazooka

Serves: 4 rolls 
Prep Time: 20 minutes 
Cook Time: 15 minutes (rice)

Ingredients:

Rice

    1½ cups sushi rice
    2 cups water

Seasoned Rice

    3 tbsp rice vinegar
    1 tbsp sugar
    1 tsp salt

Spicy Tuna

    8 oz sushi-grade tuna, finely diced
    2 tbsp mayonnaise
    1–2 tbsp sriracha, to taste
    1 tsp soy sauce
    1 tsp sesame oil

Roll Components

    4 sheets nori (seaweed)
    1 cucumber, julienned
    1 avocado, thin sliced

Optional Garnish

    Sesame seeds
    Green onions
    Pickled ginger
    Wasabi

Instructions

    Rinse sushi rice until water runs clear. Cook rice with water according to package directions.
    While warm, gently fold in rice vinegar, sugar, and salt. Let cool to room temperature.
    In a bowl, mix tuna, mayonnaise, sriracha, soy sauce, and sesame oil until combined. Chill until ready to use.
    Place nori sheet shiny side down. Add an even layer of rice, leaving about 1 inch uncovered at the top edge.
    Place rice-covered nori into the sushi bazooka according to manufacturer instructions.
    Add spicy tuna, cucumber, and avocado in a straight line down the center.
    Close bazooka and press firmly to form the roll. Open and remove roll carefully.
    Slice into bite-size pieces using a sharp knife. Garnish as desired and serve.

How to Make a Spicy Tuna Sushi Roll at Home | Easy Sushi Recipe
The Florida Keys are home to the continental United States’ only barrier coral reef system, a vital underwater ecosystem that supports marine life, fishing, diving, tourism, and coastal protection. In this segment, The Fish Guyz visit Plant a Million Corals on Summerland Key, Florida, to learn how coral restoration efforts are helping rebuild reefs in the Florida Keys and beyond.

Co-founder Dee Dee Vaughan shares how the organization has grown from just 280 corals to more than 50,000 in three and a half years, thanks to volunteers, donations, and groundbreaking coral nursery techniques. Their facility is now capable of producing its first million corals, with a larger goal of outgrowing 500,000 corals annually and eventually producing a million corals every year — or even every six months.

One of the most exciting breakthroughs is the ability to grow large, mature corals in a nursery in as little as 14 months, compared to the 25 to 75 years it can take in the wild. These adult corals can then be outplanted onto reefs, where they have the potential to reproduce and help restore damaged reef systems naturally.

Healthy coral reefs do more than support biodiversity. They help protect communities throughout the Florida Keys and coastal regions from storm surge and hurricane impacts. The biggest challenge now? Space and funding. More tanks mean more corals, more staff, more volunteers, and a bigger impact on reef restoration worldwide.
